*Blend everything except the spinach together in vitamix to keep it a light yellow color. blend half with the spinach for the green color. Layer together in cup and enjoy.

Dessert - Strawberry Cheesecake (raw, healthy, and so delicious!)
Yes, I made my own birthday cake and it was amazing and so healthy!

Crust
1.5 cups Organic sprouted almonds
1 cup Organic Majool dates
1/2 cup Organic figs
1/2 cup Organic sunflower seeds
*Pulse in food processor until you can form into a ball. Press into pan. Line with fresh cut strawberries for added flair when you cut.
1 cup soaked and shelled almonds
1 whole organic lemon (juiced)
a few pieces of organic coconut meat
a thumb chuck of organic raw cocoa butter
A tblsp of raw organic baobob powder (optional, but this gives it a major health kick!)
A little almond milk to soften
Goats cheese (Optional)
*Process about five minutes in food processor until creamy.
*If you want to keep it raw vegan, stop here, it will taste JUST LIKE cheese cake filling without the cheese. I added a small package of organic goat cheese at this point. Feel free to eat it either way.
**Pour creamy filling onto of crust. Add strawberry topping to that. Freeze. Cut yourself a slice of pure healthy heaven and ENJOY! No sugar, no processed cream cheese -- all healthy nutrient dense whole foods from the earth.
