Day 39 - Nutrient Dense Healing Foods from the Earth

Upon Waking - Drink pint Glass of Water

Morning Drink - An Organic Apple

Morning Food - BP&J Yogurt
Greek Organic Yogurt
Organic Raspberries
Organic Blackberries
Tsp Organic Peanut butter


Mid-morning drink - Water

mid-morning food - A handful of grapes

Lunchtime drink - Watermelon Juice
*Blend watermelon in vitamix and strain.


lunchtime food - 2 Peanut butter love balls

Afternoon Drink  - Water

Afternoon Food - NA

Dinnertime Drink - Water

Dinnertime Meal - Zucchini Avocado Pesto Pasta
Organic zucchini (Spiralized)
Half a small Zucchini
1 Avocado
1 Pre-frozen cube of pesto
1 small lemon, Juiced
1/4 cup of organic sunflower seeds
*Blend in vitamix until creamy smooth.   Toss into noodles and serve.  Add a few chopped tomatoes and toss in.








Dessert  - Healthy, no bake Pumpkin Pie


Crust
2 cups organic pecans
7-8 Madjool dates
Organic Ginger, Cinnamon, Pumpkin Pie Spice
1 tbsp. organic coconut oil & ghee (Or just coconut oil)
*Pulse in food processor until fine. Press into pan.




Pumpkin Filling
Organic Pumpkin puree (from real pumpkin.  Cooked.)  Or 2 cans
8 Madjool Dates
1 tbsp. organic Vanilla
2 tbsp. coconut oil
2 tbsp. coconut milk or as needed to blend. 
Organic cinnamon, ginger, nutmeg, pumpkin pie spice
*Blend in vitamix until smooth. Pour on top of crust.  Freeze or refrigerate to set.  I kept mine in the fridge.  Top with coconut whipped cream.  Or leave plain.   Very tasty healthy pie for the fall season!
