Afternoon Drink -Green Kiwi Smoothie
Organic Greens from my garden

*Blend in Vitamix, serve cold

Dinnertime Drink - NA
Dinnertime Meal - Roasted Chicken with Roasted Brussels Sprout, new Potato, and fig salad
(Make the salad is the main, the chicken the side)

Prep the figs
Fresh figs: cut the tops off
Goat Cheese: stuff the figs with a nickel size of goat cheese
Organic Balsamic Vinegar: drizzle over the tops
Brussels Sprouts
Steam the Brussels sprouts in a double boiler (for about 7 minutes or until just tender. Don't overcook to retain all the nutrients)
Sauce for Brussels sprouts
Squeeze half lemon
1 tbsp of raw honey.
Mix and pour over the steam Brussels sprouts and toss.

*Put in vitamix or food processor and make ice-cream!

In separate bowl
1 cup pecans
1 tbsp organic coconut nectar (could also use pure maple syrup). Lightly toss pecans to coat.
Sprinkle with pink salt and toss to coat.
*Stir this mixture into the ice-cream and serve immediately!
SOOOOOOOO good!
My ice-cream is usually a much harder soft serve, but this was so delicious I can't wait to make it again and freeze the bananas fully first.

Roast the New Potatoes
Organic Baby new potatoes (Scrubbed well)
Organic garden rosemary (tossed in)
Organic coconut oil (1 tsp) to coat
Organic fresh pressed garlic (tossed in)
Roast in oven at 375 for around 20 minutes or done.
Half way through cooking, smash the potatoes down with a cup to break open slightly, toss again and cook until finished.
Brussels Sprouts

Layer on Brussels sprouts, then potatoes, then raw organic walnuts, then figs.
Dessert - Salted Toffee Pecan Ice-Cream (All Healthy foods, no sugar!)
3 Frozen bananas as ice-cream base (mine weren't quite frozen, so the ice-cream turned out softer than normal, but I just couldn't wait. Wait if you can though!)
1/4 cup of coconut milk.*Put in vitamix or food processor and make ice-cream!
