Asian Chicken Cabbage salad (See day 16 for recipe). I used my left overs for this.
Brown rice wrap (lay flat in boiling water for 1 minute, set food on soft wrap, wrap up folding in sides)
Dipping sauce - coconut amino's

Afternoon Drink - Vegatable Juice with Cherry

Romaine Lettuce
Zuchuni

*Juice, add in cherry juice to top it off.

Afternoon Food - A Pear
Dinnertime Drink - Water
Dinnertime Meal - Out for dinner (Italian restaurant)
We share a bunch of appetizers, whole real food. Stayed away from sauces, pasta's, bread, etc.
Grapes, parmesan cheese, olives, 1 smoked salmon on cucumber, a few pieces of beef carpaccio, 1 shrimp, 1 half stuffed portabello mushroom cap, 1 half crab cake, half lettuce taco.


Dessert - Real Whole Raw Healthy Carrot Cake (For Our anniversary. I love you sweetie. xox)

The Cake
6 cups juiced carrot pulp (A great use for all that juice pulp! Save the juice and drink it later)
1 cup raisins
1 cup dates
1 cup walnuts
1/2 cup shredded coconut
1/2 cup coconut flour
1 cup assorted figs, prunes, apricots
vanilla
ginger
cinnamon
*Mix in food processor until crumbly sticky wet consistency. Press into pan.




The Frosting
2 cups cashews
2 cups coconut water
1 cup dates
1 half fresh, squeezed lemon juice
Many dashes of cinnamon (tbsp.)
1 inch of vanilla bean
*blend in Vitamix. Pour onto the layer of carrot cake, spread out with
spatula.

Assembly
Make the cake in the food processor and the frosting in the Vitamix. Have
both ready to use at once. Use a cake pan so you can pull away edges – this
won’t lift well out of a regular pan without ruining it. Assemble and
press in half the cake on bottom of pan. Pour in layer of icing. Assemble
and press in the rest of the cake on top of icing layer carefully. Pour
another layer. Top with a sprinkle of grated carrot, lemon zest, and
cinnamon. Put in freezer for a few hours. Transfer to fridge. Cut yourself a wonderful slice of raw, no bake, no sugar, no flour, healthy, all the vitamins and enzymes in tact, real carrot cake! ENJOY!
