Dinnertime Meal - Zucchini Noodle Pasta in Tomato Creamy Sauce
Noodles
2-3 zucchini's, spiralized

Healthy Tomato Cream Sauce
Fresh Organic Basil
3-4 Organic Sun dried tomatoes
2 Organic Garden Tomatoes
1/2 Cup walnuts
2 Cloves garlic, crushed
1/2 Lemon, Juiced
Pink Salt
Zucchini Ends and pieces (from making the pasta)
*Blend in Vitamix until Smooth and creamy (2 minutes), Pour over noodles and toss well.

Mushrooms (wild, organic) Sauteed in coconut oil
A little Feta cheese, crumbled

Summer Plum Pie


Healthy Raw Pie Crust
5 Majool Dates, soaked for a few hours and pitted
1/2 Cup raisins
Walnuts, Almonds
Coconut Flour
*Process dry ingredients first, then add in wet (raisins and dates) until doughy-like, in food processor. Press into pan. Put into freezer.


Filling
Organic Market Fresh Plums
Dash Organic Vanilla
tblps Organic Coconut Nectar
Let sit in fridge to cool. Slice, top with Healthy Organic Coconut Whipped Cream, enjoy!

Coconut Whipped Cream
Coconut Milk (Fat from the top only, leave the liquid in bottom of can)
tblsp Cocnut Nectar
Pinch Vanilla
*Beat with beater for 2 minutes until soft and fluffy. Serve immediately. Enjoy!
