Day 53 - Nutrient Dense Foods from the earth

Upon Waking - Drink pint Glass of Water

Morning Drink -Spinach acai blueberry almond shake (left over from yesterday)


Morning Food - An organic apple

Mid-morning drink - Organic Morning Green Juice
Organic cucumbers
Organic celery
Organic Romaine Lettuce
Organic Spinach
Organic Carrots
*Juice and drink cold.

lunchtime food - Salmon Boats
Salmon (Cooked, left over from 2 nights ago.  Chunked up)
Organic Dijon Mustard (a little to mix in with salmon)
Organic tomato (sliced on top)
Organic Hard Goat Cheese
Organic Romaine Lettuce (to use as the sandwich boat)

Dinnertime Drink - Water

Dinnertime Meal -  Homemade Tomato Sauce with brown rice angel hair noodles and organic black bean noodles.
 

Tomato Sauce
Bunch of organic garden picked tomatoes from my garden
Organic herbs (Oregano, basil)
1 Large White Onion
Garlic Ball
1 can organic tomato paste
1 cup Sundried Tomatoes
**Throw all Cherry tomatoes into the pot as is.   Blend the large tomatoes with the rest of ingredients together in Vitamix. (in a few batches).  Put in pot.  Boil for an hour on med heat with lid on.   Take lid off and simmer for 6 hours on low to evaporate some of the water from tomatoes.  Serve over black bean noodles. Mid-morning drink - NA

mid-morning food - Steel Cut Oatmeal with healthy spinach acai blueberry almond Sauce
*Drink the rest as a smoothie






Lunchtime drink - Iced Organic Decaf Green Tea

lunchtime food - Tomato Goats Cheese Salad
Organic garden picked cherry tomatos
Organic basil
Hard Goats Cheese
Sprinkle of balsamic vinegar




Afternoon Drink - Second glass of Iced Organic Decaf Green Tea

Afternoon Food - Handful of Organic sprouted almonds and organic raisins



Dinnertime Drink - Water

Dinnertime Meal - Organic Squash Burritos
Organic Brown Rice (cooked per directions) Half Diced and half blended as sauce.Organic butternut squash (cooked)
Organic Leeks (Cooked and chopped into rice)
Organic Black Beans
Organic red peppers (diced into rice)
Organic homemade Salsa (as topping)
Organic Avocado (chopped as toppings)
Organic raw cheddar Cheese (grated as toppings)




 
Stir leeks and diced squash into rice.   Use other half and blend in vitamix, then stir in as a sauce.



 
 Stir in black beans and red peppers
 

 
 


 
I wrapped them in whole wheat tortilla wraps for my kids (less mess), and laid them on organic corn tortilla shells for myself.

Day 51 - Nutrient Dense Foods from the Earth

Upon Waking - Drink pint Glass of Water

Morning Drink - Green Juice
Organic Cucumber
Organic Carrots
Organic Romaine
Organic Spinach
Organic Celery
*Juice and serve cold





Morning Food - Steel Cut Oatmeal with berries and homemade almond milk
Steel Cut Organic Oats (cook per directions)
Fresh organic rasberries
Frozen organic blueberries
*Top with quick homemade almond milk.

Quick organic almond milk
1 tbsp raw organic almond butter
1 organic madjool date
1/2 cup filtered spring water.
*Blend in vitamix until creamy




Mid-morning drink - NA

mid-morning food - 1 organic plum, 1 piece watermelon


Lunchtime drink - Green juice


lunchtime food - Slice of Carrot Cake (previously frozen)
(see day 18 for recipe)



Afternoon Drink - Butternut Squash almond milk smoothie
1/2 cup Butternut Squash (cooked and pureed)
1/2 cup quick organic almond butter (see recipe above)
*blend in vitamix.  Serve with ice.



Afternoon Food - An Apple

Dinnertime Drink - Water

Dinnertime Meal - Organic Healthy Leek Broccoli Potato Cheese Bake with baked salmon
 
Salmon (baked in oven at 375 for 15-20 minutes)
*Set aside and cut small pieces for top of casserole bake

Casserole Bake
Organic Leeks (Sliced)
Organic Broccoili (Chopped into small florets)
Organic Spinach
Organic red potatoes (sliced)
*Make cheese sauce next







Healthy Cheese Sauce
organic Raw milk cheddar (around 1 cup)
1 organic tomato
1 organic large carrot (for the orange cheese color)
Pink Salt
*Blend in Vitamix until creamy sauce.  Toss contents of casserole in the sauce.





 
Bake casserole in oven at 350 for 45 minutes. Add Salmon to top.
